POSITION OVERVIEW

We are seeking a highly skilled and experienced Mexican Pastry & Bread Baker capable of producing large-scale daily production of traditional Mexican pastries and breads. This is a commercial bakery position that requires speed, consistency, and efficiency. You will have your own dedicated baking space and support staff, but must be able to manage and meet high production demands.

QUALIFICATIONS

  • Proven experience in commercial bakery or high-volume production.
  • Knowledge of Mexican pastries, breads, and dough techniques.
  • Ability to handle fast-paced, high-output baking environment.
  • Strong organizational and time management skills.
  • Must be punctual and reliable (5 AM start required).
  • Must maintain cleanliness and follow food safety standards.

  • Bake large quantities of authentic Mexican pastries including:
  • Conchas
  • Empanadas
  • Niños envueltos
  • Coshitos
  • Cuernitos
  • Buñuelos
  • Yoyos
  • Produce high-volume batches of breads including:
  • Sonoran hot dog bread
  • Bolillos
  • Birote
  • Torta bread
  • Hamburger buns
  • Execute consistent, commercial-quality pastry and bread production.
  • Place and manage bulk ingredient orders (e.g., Dawn products, flour, sugar, yeast, etc.).
  • Develop recipes and create pastries in large-scale quantities when needed.
  • Maintain clean, organized, and safe work environment.
  • Work with bakery staff to meet production schedules and holiday demands.
