SUMMARY: The Banquet Pastry Chef will supervise the bakery team in performing various tasks to ensure that fresh baked goods are prepared and available for use by various venues at the Coeur d’Alene Casino Resort Hotel. RESPONSIBILITIES: Supervise and contribute to daily bakery production, set up, and tear down. Ensure consistently high-quality production of all bakery items. Train new employees in all aspects of the pastry kitchen. Ensure strict adherence to sanitation and cleanliness guidelines. Work closely with all chefs to improve employee morale and conduct employee discipline fairly and consistently. Assist chefs in maintaining food and labor cost. Work with chefs to create and implement new menus and specials. Ensure proper quantities of stock are ordered to allow for production while limiting waste. Other projects and duties as assigned. Qualifications QUALIFICATIONS Education/Experience: High school diploma or equivalent required. Associate’s degree in baking and pastry arts or related field preferred Minimum of three years previous professional baking experience required. Must be 18 years of age or older One year of previous supervisory experience required Skills/Knowledge: A high level of proficiency in Microsoft Word and Excel is required. Excellent written and verbal communication skills required Basic math skills required. Strong customer service skills required. Must be able to work well in a team environment. Must be proficient in correct heating, cooling, reheating, and sanitation procedures. Specific bakery skills and knowledge required: -yeast doughs -quick breads -pastry doughs -cookie, pie and cake batters & fillings -custards, creams and mousses -icing, glazes and sauces -frozen desserts -plated desserts -wedding and specialty cake decorations -conversions, calculations and recipe costing Physical Demands: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.
