Position: Pastry Chef de Partie (Full-Time) - Day and Evening Shifts
Reports to: Pastry Chef
Come work with and learn from Victoria’s own Executive Chef Kristian Eligh and celebrated Pastry Chef Dominique Laurencelle as they design seasonally focused menus that celebrate the global and locally sourced ingredients. Marilena Cafe & Raw Bar was recognized as one of Canada’s 100 Best Restaurants, ranking #39 in 2025. At the Vancouver Magazine Restaurant Awards, Marilena was celebrated as the Best Restaurant in Victoria. and is celebrated for its locally sourced West Coast cuisine.

EXPERIENCE AND QUALIFICATIONS:

  • At least three years of pastry experience, preferably at a high-volume restaurant
  • Completion of a designated culinary school
  • Excellent interpersonal skills and fluent communication skills in English
  • Ability to prioritize, organize, and follow through as necessary
  • Must possess a passion for food and developing knowledge of baking/pastry methods
  • Food Safe certification is an asset
  • Flexible working hours, including weekends and evenings
Responsibilities

(Other duties may be assigned as required)

  • Create and design bread and cakes under the direction of the Pastry Chef
  • Completed assigned daily prep items with high quality and fresh ingredients
  • Maintain sanitation standards throughout the kitchen to comply with Provincial regulations
  • Provide input into product ordering, as well as cost control and monitoring
  • Ensure food quality in presentation and production are consistently maintained at a premium level
  • Assist with menu development as required
  • Assist with cost control, monitoring and ordering of supplies as required
