Description The Pastry Chef is responsible for leading the pastry program, developing creative and seasonally inspired desserts, breads, and baked goods that align with Gravity Haus’ culinary philosophy. This role oversees daily pastry production, menu development, and presentation standards while maintaining efficiency, food safety, and quality. The Pastry Chef trains and mentors pastry staff, collaborates with the Executive Chef and culinary leadership, and ensures a consistent and memorable guest experience across all dining outlets and events. Key Responsibilities Design and execute dessert and pastry menus that complement restaurant and event offerings, with a focus on creativity, quality, and seasonal ingredients. Oversee daily production of pastries, breads, and desserts, ensuring consistency in flavor, texture, and presentation. Maintain high standards of sanitation, cleanliness, and food safety in the pastry kitchen. Manage inventory, purchasing, and cost control for pastry ingredients and supplies. Train, schedule, and supervise pastry cooks and assistants; provide mentorship and ongoing development. Collaborate with the Executive Chef, F&B leadership, and event teams to plan menus for banquets, special events, and member activations. Maintain pastry equipment in safe and working condition; coordinate repairs and maintenance as needed. Monitor labor and food costs to meet established budget goals. Work Environment Hours: Flexible schedule with availability to work evenings, weekends, and holidays as needed. Physical Requirements: Ability to stand and work on feet for extended periods of time (up to 8–10 hours), frequent bending, stooping, lifting, and reaching, must be able to lift, carry, push, or pull up to 50 lbs. regularly, manual dexterity for operating pastry tools, decorating, and handling delicate items. What We’re Looking For 3–5 years of professional pastry experience, including supervisory responsibilities. Strong knowledge of pastry techniques, dessert plating, bread production, and baking science. Proven track record of creating innovative, high-quality desserts in a restaurant, hotel, or resort setting. Ability to manage inventory, purchasing, and food costs. Food Safety Manager certification (or ability to obtain). Preferred Culinary or pastry degree from an accredited institution. Experience with high-volume operations, banquets, and multi-outlet properties. Leadership skills with ability to train, mentor, and inspire a team. Strong organizational and time management abilities.
