Overview

To join our established and professional kitchen team and assist with the day-to-day pastry production at The Petersham.

The Petersham is a privately owned hotel with 61 bedrooms, overlooking the River Thames at Richmond, Surrey. Our food and beverage operation includes breakfast, lunch, Afternoon Tea, dinner and a busy programme of weddings, private functions and exclusive-use events.

We are looking for an enthusiastic and experienced Pastry Chef de Partie who takes pride in their work and has a good eye for detail. The successful candidate will help us maintain the high standard of pastry, desserts and Afternoon Tea that our guests expect from The Petersham.

Generally provides direction to:

Commis Chefs and junior members of the kitchen team when required.

Generally receives direction from:

Head Chef

Responsibilities

  • Prepare and produce pastries, desserts, cakes and other pastry items for the hotel.
  • Prepare the pastry and sweet items required for our Afternoon Tea service.
  • Prepare desserts and other pastry items for the restaurant.
  • Assist with pastry production for weddings, private functions and other events.
  • Make sure all mise en place is prepared correctly and ready for service.
  • Follow recipes and instructions from the Head Chef and ensure consistency in the finished products.
  • Take care with the presentation of all desserts, pastries and Afternoon Tea items.
  • Work closely with the Head Chef and the rest of the kitchen team to ensure a smooth service.
  • Help with the preparation of new desserts and pastry items when required.
  • Keep the pastry section clean, tidy and well organised throughout the day.
  • Make sure food is stored correctly and all products are labelled and dated.
  • Follow food hygiene, allergen and Health & Safety procedures at all times.
  • Help with stock control and make sure products are rotated correctly to reduce waste.
  • Look after pastry equipment and report any problems to the Head Chef or management.
  • Work with the Events and Restaurant teams when pastry is required for weddings, private parties and other functions.
  • Be flexible and help other areas of the kitchen when required, particularly during busy services.
  • Support junior members of the kitchen team and share knowledge and good working practices.
  • Maintain a professional and friendly attitude towards colleagues and other departments.
  • Take pride in the food leaving the kitchen and make sure it meets the standards expected at The Petersham.
  • Carry out any other reasonable duties requested by the Head Chef or management.

Requirements

  • Good knowledge of pastry and dessert preparation.
  • Good understanding of professional kitchen practices.
  • Experience of preparing Afternoon Tea products would be an advantage.
  • Good attention to detail, particularly with presentation.
  • Well organised and able to prepare work in advance of service.
  • Able to work well in a busy kitchen and remain calm when under pressure.
  • Good communication skills and the ability to work as part of a team.
  • Good understanding of food hygiene and Health & Safety.
  • A professional approach to work and a willingness to learn.
  • Good general hospitality and kitchen knowledge.
  • Previous experience working in a professional kitchen.
  • Experience at Chef de Partie level or a similar position.
  • Good pastry and dessert skills.
  • Good standards of personal hygiene and cleanliness.
  • Reliable, punctual and well organised.
  • Able to work as part of a team.
  • Flexible with working hours, including weekends and evenings when required.
  • To be conversant with all relevant Food Safety and Health & Safety procedures outlined in The Petersham's Health and Safety Manual.
