SKILLS & QUALIFICATIONS

  • Proven experience as a Pastry Chef or strong background in patisserie within a hotel, restaurant, or bakery environment.
  • Knowledge of classical and contemporary pastry techniques.
  • Strong organisational skills and ability to work to deadlines.
  • Passion for innovation and artistic presentation.
  • NVQ or equivalent culinary qualification desirable.
  • Food hygiene and safety certification required.

Responsibilities

PURPOSE OF THE ROLE

The Pastry Chef is responsible for preparing, baking, and presenting high-quality pastries, desserts, breads, and sweet products for the hotel’s restaurants, banqueting, weddings, and afternoon teas. This role requires creativity, precision, and the ability to work under pressure to maintain the hotel’s culinary reputation.

KEY RESPONSIBILITIES

  • Create, prepare, and present a wide range of pastries, desserts, breads, cakes, and afternoon tea items.
  • Design and develop seasonal dessert and pastry menus in collaboration with the Head Chef.
  • Ensure consistency, quality, and presentation standards across all pastry offerings.
  • Manage stock rotation, ordering, and cost control for the pastry section.
  • Maintain a clean, safe, and organised pastry kitchen area in compliance with food hygiene and safety standards.
  • Train and supervise junior kitchen staff or apprentices in pastry techniques.
  • Contribute to the smooth running of the kitchen team and support in other areas if required.
  • Uphold the values and service standards of Owston Hall Hotel.
