About Wynn Al Marjan Island: On schedule to open in the United Arab Emirates in Spring 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf. About the Position: Wynn Al Marjan Island is currently seeking a Pastry Chef to join the resort’s Culinary team. The primary duties and responsibilities of this role are: * Supervise and participate in the preparation of plated desserts, cakes, tarts, and laminated doughs. * Monitor daily production schedules and ensure timely delivery of pastry items to outlets and events. * Requisition raw materials and oversee ingredient quality, including chocolate, dairy, and fruit components. * Guarantee all pastry items are fresh, hygienic, and stored according to Company standards. * Maintain HACCP standards for dry and cold storage areas, ensuring cleanliness of kitchen and utensils. * Monitor food preparation, kitchen costs, inventory levels, and portion and quality control. * Maximize resource and equipment capacity while minimizing waste. * Deliver high-quality pastry products to outlets and guests. * Address guest requests and resolve complaints professionally and promptly. * Assign pastry workstations and schedule rosters to optimize team productivity. * Maintain accurate time and payroll records. * Identify and correct deviations from kitchen procedures through on-the-job training. * Conduct departmental training and refresher sessions in coordination with the F&B Trainer. * Interact professionally with Department and Company employees, management, and contractors. * Attend departmental meetings and communicate relevant updates. * Promote team spirit and maintain effective multicultural communication. * Adhere to Company policies and comply with the Code of Conduct. * Maintain grooming and hygiene standards in accordance with Department and Company expectations. * Follow health and safety protocols and contribute to ongoing improvements. * Participate in the Company recycling program and uphold sustainability practices. About You: * Secondary school diploma or equivalent. * Minimum of 5 – 8 years’ experience in a high-volume pastry kitchen or luxury hotel environment. * Demonstrated expertise in pastry preparation, decoration, and finishing techniques. * Strong knowledge of sanitation standards and HACCP compliance. * Proven leadership and supervisory skills with the ability to mentor and motivate employees. * Effective communication and interpersonal abilities. * Strong organizational skills with attention to detail and compliance. * Basic computer proficiency. * Must be a minimum of 21 years of age.
