PROOF & PARCEL BAKERY — EL PASO, TX (WESTSIDE/MESA)

Job Type: Part-time to start (20–30 hrs/wk), potential to grow to full-time
Openings: 2

Pay: $7.25–$12.00/hr, W-2 employee from Day 1

  • Progression: First 30 days $7.25/hr → Days 31–90 $10.00/hr → $12.00/hr after 90 days if standards are met

Proof & Parcel is a small, from-scratch bakery focused on European-style breads and classic pastries with a modern touch. We care about craft, consistency, and serving the working folks of El Paso with honest, handmade food.
The Role
You’ll support daily pastry and bread production: scaling ingredients, mixing, shaping, proofing, baking, finishing, labeling, and keeping a spotless station. This is a hands-on, learn-by-doing role with a clear growth path to Pastry Assistant.

Schedule

  • Morning shifts, typically 4:00 AM–12:00 PM, Mon–Fri to start
  • Occasional weekend or event shifts as needed
  • We try to post schedules at least 1 week in advance

What You’ll Do

  • Scale and prepare doughs/batters by gram weight; follow recipes and SOPs precisely
  • Assist with lamination support, portioning, shaping, proofing, baking, and finishing
  • Set up/tear down stations; wash sheet pans, bowls, tools; keep the dish pit moving
  • Label, date, and store products correctly; maintain FIFO and walk-in organization
  • Record temps/times, yields, and waste; help with daily pars and simple inventory counts
  • Follow all food safety and sanitation standards

What We’re Looking For

  • Reliable, coachable, and punctual with strong work ethic
  • Comfortable with early mornings and working on your feet
  • Able to lift up to 50 lbs and move quickly with care and accuracy
  • Food Handler Card (TX) within 7 days of hire (we’ll help point you to it)
  • Basics of weights/grams and kitchen math (we’ll train)
