Job Summary The Pastry Team Leader supports the Pastry Chef in the daily operations of the pastry kitchen by supervising team members, maintaining high standards of food quality and presentation, and ensuring efficient workflow. This role requires strong technical pastry skills, leadership capability, and close collaboration with other senior chefs to deliver an exceptional culinary experience consistent with Couples Negril’s brand standards. KEY RESPONSIBILITIES Operational & Culinary Responsibilities Assist the Pastry Chef in planning, preparing, and executing daily pastry and dessert production. Ensure all pastry items meet established quality, taste, consistency, and presentation standards. Oversee preparation of desserts, breads, pastries, and specialty items for restaurants, buffets, and special events. Ensure proper portion control and minimal wastage in line with cost-control guidelines. Leadership & Supervision Supervise and guide pastry team members during assigned shifts. Provide on-the-job training, coaching, and performance feedback to pastry staff. Ensure staff adhere to schedules, grooming standards, and kitchen policies. Step in to lead pastry operations in the absence of the Pastry Chef, as required. Collaboration & Teamwork Work collaboratively with the Executive Chef, Sous Chefs, and other senior chefs to ensure menu cohesion and timely service. Participate in menu development, tastings, and special culinary projects. Support cross-functional kitchen operations during high-volume periods or special functions. Food Safety, Hygiene & Compliance Ensure strict adherence to food safety, sanitation, and hygiene standards at all times. Monitor proper storage, labeling, and rotation of ingredients. Ensure compliance with company policies, health regulations, and HACCP principles. Inventory & Administrative Support Assist with inventory checks, requisitions, and stock control. Report equipment issues, maintenance needs, or supply shortages promptly. Support record-keeping related to production, wastage, and quality control. POSITION REQUIREMENTS Experience and Training Formal training or certification in Pastry Arts, Culinary Arts, or a related field is preferred. Food safety and sanitation training is required. Minimum 3–5 years of experience in a professional pastry kitchen, preferably in a resort or hotel environment. Prior experience in a lead, senior pastry cook, or supervisory role is an asset. Skills & Competencies Strong pastry and baking skills with attention to detail and presentation. Proven leadership and team supervision abilities. Ability to work collaboratively with senior culinary leaders. Strong time-management and organizational skills. Ability to work efficiently under pressure and meet deadlines.
