Job Description

The Bakery ("Pala") Lead supervises the production of bread, focaccia and pizza alla pala in Eataly’s baking facility. Reports to the Head Chef.

  • Supervises and directs the bakery production staff
  • Assists the Bakery Production Manager with leading, training and developing bakery team members
  • Prepares pizzas according to specific recipes
  • Complies with all portion sizes, quality standards, department rules, policies and procedures
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Works towards mastering all shifts in pizza production
  • Assists Sales Associates if needed and engages with guests interested in learning about pizza production
  • Maintains and nurtures natural yeast and naturally leavened products
  • Ensures a clean and sanitary food production area
  • Performs cashier duties including processing returns, voids and exchanges when necessary
  • Documents, investigates, elevates and resolves employee and guest incidents
  • Performs other duties as required or assigned

QUALIFICATIONS

  • 3 - 5 + years in a bakery preparation position
  • Excellent communication skills
  • Basic math and measuring skills
  • High school diploma or equivalent; degree from a post-secondary culinary arts training program preferred
  • Availability to work onsite with a flexible schedule often including evenings and weekends
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to use a burning oven, commercial stand mixer and other pastry baking equipment
