What You’ll Do As a Prep Cook, you’ll support our sushi production team in a commissary kitchen setting by preparing all essential ingredients needed for daily manufacturing. You’ll handle seafood, vegetables, and rice preparation in a fast-paced, food-safe environment to ensure smooth production later in the day. Responsibilities: Prepare sushi rice according to Hissho’s standardized recipes and quality standards. Wash, peel, and cut produce (avocado, cucumber, carrots, etc.) for daily batches. Defrost and portion seafood and other ingredients to spec, following HACCP and Hissho protocols. Maintain ingredient storage, rotation, and labeling (FIFO). Record and verify daily prep logs (rice pH, temperature, cooling). Assist in setup for production shift — stocking make tables and equipment. Maintain a clean and sanitary work area, following FDA and facility procedures. Support daily and weekly deep cleaning and equipment sanitation. Communicate with the Production Lead to ensure accurate prep quantities. Requirements ServSafe certification required, or willingness to obtain certification. Previous restaurant, commissary, food prep, seafood, or production kitchen experience preferred. Basic understanding of food safety, sanitation, handwashing, and cross-contamination prevention. Experience preparing rice, vegetables, seafood, sauces, or ready-to-eat foods is a plus. Ability to follow recipes, prep lists, batch sheets, and standard operating procedures. Strong attention to detail when measuring, portioning, labeling, and recording prep information. Basic math skills for weighing ingredients, scaling recipes, counting portions, and completing logs. Comfortable using kitchen tools and equipment such as knives, rice cookers, scales and peelers. Able to lift up to 50 lbs and stand for long periods. Comfortable working early mornings, weekends, or assigned production shifts. Dependable attendance and punctuality are required. Commitment to maintaining a clean, organized, and food-safe work area.
