POSITION SUMMARY
Provide production baking of a wide variety of baked goods, with multiple processes. We are a federally licensed facility, requiring implementation of pre-operating inspections, good manufacturing practices and efficient production and documentation to meet regulatory requirements. Must be flexible and able to respond to changing conditions and production manning to maximize production output for the company, including working with multiple types of equipment. Will train as needed.
To accomplish this job successfully, an individual must be able to perform:
Prepare any and all bakery items following Good Manufacturing Practices and standardized recipes, including measuring ingredients, operating machinery, including but not limited to hand portioning, filling and decorating of a variety of cookie, pies, cakes and other pastry products.
Portion, roll, knead, cut, or shape dough to forms breads, buns, doughs, or other baked goods.
Maintain, clean, and sanitize work area throughout the entire shift by complying with all sanitation and health codes. Post operating cleaning and sanitation also required.
Ensure consistency and quality for all bakery items prepared.
Set oven temperatures and place items into hot ovens for baking. Observe color of products being baked and adjusts oven temperatures and bake times, and or humidity, or proofer settings accordingly.
Support Research and Development (R&D) work in scaling up and testing recipes to optimize new and improved products.
Use machinery to shape and form various baked items. May also include handwork to place doughs in pans, molds, or on sheets and bake in production or convection ovens.
Check the quality of raw materials to ensure that standards and specifications are met. Must be able to record lot numbers and inspect ingredients for good quality.
Adapt the quantity of ingredients to match the amount of items to be baked.
Apply glazes, whipped cream, or other toppings to baked goods, using spatulas or brushes.
Prepare garnishes as needed for baked goods.
Decorate baked goods, such as cream pies, using a pastry bag.
Set time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed or cooked according to instructions.
Measure or weigh flour or other ingredients to prepare batters, doughs, fillings, or whipped cream, using scales or graduated containers.
Obtain 10 to 20 lbs of ice from another room, and carry it to the batching area.
Lift and carry 50 lb bags of flour, up to 50lbs of various ingredients including but not limited to buckets of eggs, and other supplies from the dry storage area to the batching area.
Carry a stack of full sheet trays as needed, but mainly transport sheet pans using a cart as needed from the various areas in the factory.
Carry large pots for making pastry cream, sauces, and pie toppings from the storage area to the stove top for cooking.
Package all baked goods in the appropriate trays or pans, and carry/lift them to the designated storage area.
Must be able to stand on a hard floor for 8 to 12 hours a day, in either a cold or hotenvironment.
Clean all baking equipment including: bowls, ovens, mixers, proofer, floors, freezer, and refrigerators. This may include squatting, kneeling, or crawling to clean under, over, and around equipment.
Clean, breakdown, and put away all station and set up machinery for next use as required.
Must be dependable, report to work as scheduled an on time, and follow all policies regarding scheduling and attendance. Excessive absence, excused or unexcused will not work well in a production team environment.
Must be Detail Oriented - Ability to pay attention to the minute details of production baking that requires federally mandated documentation and to perform work accurately and thoroughly.
The ideal candidate is a team player and able to complete assigned tasks under stressful situations while exhibiting a cheerful demeanor towards others and bring energy to the performance of the task. Must wear closed toe shoes and no jewelry in the production area.
