  • Monitor activities relating to F&B cost controls with the Hotel.
  • Verify that Hotel Standard purchase specifications are followed on a continuing basis.
  • Check prices on daily quotation sheets. Verify the accuracy of the entries, extensions and totals of the Receiving Clerk’s daily report for all F&B items.
  • To verify that Notice of Error Correction and Goods Received without invoice forms have been prepared where applicable. Conduct monthly Market Survey.
  • To spot check merchandise daily to see that it meets the specifications and review any deficiencies with receiving clerk to ascertain the reason for sub-standard merchandise.
  • Reconcile total food purchases with the receiver clerk’s receiving report for the month.
  • Ensure that all merchandise is stored in a properly locked areas and monitor control of keys for all such areas.
  • Assist the Guest with all their queries. To be aware of Hotel Customer Programs.
  • To act according to the complaint handling standards & procedures.
  • To carry out reasonable duties as may be requested by the department head.

  • Prepare and administer hotel evaluations on staff associates
  • Apply disciplinary actions as necessary.
  • Follow any reasonable request made by EC or other hotel management.
  • Practice all safety procedures.
  • Supervise and ensure that store and receiving functions are properly done on daily basis, stocks are maintained properly, system reports are timely updated and store level is accurate at all times.
  • Daily checked and verifying posted/un-posted invoices with receiving report and counter sign.
  • Assist to Receiving clerk closed the Open purchase order and maintain a file monthly basis.
  • Assist Cost Controller absence review/approve store issues and purchase request
  • To reconcile of all credits (officer meals, entertainment checks, amenities…etc.) and apply credit to the food/Beverage cost.
  • Prepare daily Flash Food & beverage cost reports.
  • Input additions, new pricing and menus into the micros POS
  • Conduct for the month end stock take with team member (storekeepers) and update of inventory system with accurate count and value.
  • Generate month end outlet variance report
  • Perform yield test of meat, fish and juices
  • Daily import of micros item sales in outlets for inventory reconciliation
  • Post daily inter-outlet transfer requests for proper cost allocation while maintaining accurate inventory reconciliation, (include spoilage)
  • Conduct regular spot checks for beverage in outlet/stores (include par level, hotel stickers)
  • Conduct regular spot checks on portion control of all items in the kitchen
  • Assist Cost Controller recipe costing of new menus and suggests sale prices/micros interface
  • Updated in the POS system to minimize the open food & beverage entries.
  • Assist Cost Controller Conduct the annual operating equipment inventory and report the losses
  • To maintain records of inventory transactions which cannot be tracked through the system such as banquet events, cocktails and buffets.
  • To perform any other duties that may be assigned from time
