Job Description Your Role in the Story As the Restaurant Manager at LUURA, you will oversee the day-to-day operations of our two flagship restaurants—Mimi Kakushi and LENEA- ensuring they consistently deliver the high standards of service, quality, and experience that define the RIKAS brand. Each restaurant has its own distinct concept and identity, and your role is to uphold their individuality while embedding the shared values, operational excellence, and culture of LUURA across both outlets. You will lead with a hands-on approach, maintaining a visible presence on the floor and setting the benchmark for service, professionalism, and guest engagement. Your operational expertise will ensure seamless service, from front-of-house to back-of-house, while driving team performance, staff development, and commercial results. This role demands a deep understanding of premium F&B operations, with a focus on delivering experiences on par with Mimi Kakushi’s avant-garde, Japanese-inspired dining and Paris Society’s elevated, contemporary style. You will be responsible for balancing the unique positioning and philosophy of each outlet with operational consistency, efficiency, and the overarching vision of the LUURA brand. Key Responsibilities Oversee the day-to-day operations of both restaurants, ensuring smooth service flow, operational efficiency, and exceptional guest experiences. Understand, respect, and maintain the philosophy and brand identity of each restaurant while aligning operations under the LUURA umbrella. Lead, inspire, and manage all restaurant staff, including hiring, onboarding, training, scheduling, performance evaluation, and ongoing development. Develop, maintain, and implement operational manuals, SOPs, and training materials to ensure consistent standards across both outlets. Deliver pre-season and ongoing training sessions; ensure daily line-ups are performed before each shift. Ensure full compliance with LUURA and RIKAS operational standards, health and safety regulations, local laws, and internal HR policies. Be present on the floor at all times, actively shadowing operations, coaching staff, maintaining standards, and personally assisting with special or VIP guests as needed. Handle guest feedback and complaints professionally, resolving issues promptly to maintain high satisfaction and brand reputation. Manage inventory, stock control, and ordering processes, raising extra needs and ensuring operational readiness at all times. Plan, monitor, and control restaurant budgets, P&L, and cost management to achieve financial targets while maintaining service quality. Collaborate closely with the F&B Manager, General Manager, and other departments to ensure seamless communication and coordinated operations. Maintain ambiance, music, lighting, and overall presentation to reflect each restaurant’s identity and high standards. Foster a positive, motivated, and professional workplace culture, addressing staff concerns proactively and preventing retention issues. Build and maintain talent pools and succession plans to meet current and future staffing needs. Support the kitchen team when required to ensure smooth coordination and service flow. Plan and execute special events, seasonal promotions, or unique guest experiences aligned with each restaurant’s concept. Monitor operational data, guest feedback, and market trends to identify opportunities for improvement, innovation, and enhanced guest experience. Utilize HR systems to manage scheduling, performance tracking, payroll, and compliance, ensuring accurate documentation and reporting. Lead by example, maintaining professionalism, service standards, and staff engagement throughout daily operations. Qualifications Who We’re Looking For Minimum of 5–7 years’ experience in upscale F&B or restaurant management, preferably within luxury or lifestyle properties. Proven experience managing multi-outlet operations and leading diverse teams. Pre-opening experience at a Greek island will be considered a plus. Strong knowledge of restaurant operations, guest service standards, and luxury hospitality trends. Excellent leadership, coaching, and team development skills, with the ability to motivate and retain talent. Experience with budgeting, inventory management, and P&L oversight. Exceptional problem-solving and decision-making abilities, especially in high-pressure situations. Proficient in operational software, POS systems, and scheduling tools. Fluent in English; additional languages are a plus. Strong communication, interpersonal, and organizational skills. Deep understanding of health, safety, and hygiene regulations. Eligible to work in (EU) countries. High standards of personal presentation and professionalism. Naturally warm, approachable, and attentive to guest needs, leading by example on the floor.
