Description
Manage the daily operations of one or more full-service food and beverage outlets, including the coordination of special events. Ensure all service standards, operating procedures, brand guidelines, and local health, safety, and compliance regulations are strictly adhered to. Restaurant Operations Effectively manage restaurant operations in line with departmental standards and procedures Ensure compliance with opening, closing, and bill payment procedures Conduct effective shift briefings to communicate VIPs, special occasions, daily specials, and up-selling focus Personally greet and farewell a minimum of 80% of guests Motivate and lead staff to deliver consistently high levels of service across all shifts Bar & Beverage Operations Ensure effective beverage service with a focus on up-selling and responsible alcohol service Advise guests on wines, including styles, recommendations, and wine service Promote cocktails and ensure quality in preparation and presentation Ensure coffee and tea are served hot and in accordance with brand standards Cellar & Stock Control Oversee cellar operations, including refrigeration systems, beer reticulation, and post-mix systems Maintain accurate stock control and requisition bar items as required Ensure adherence to spillage reporting procedures Training & Development Train bar attendants, wait staff, and support staff in beverage knowledge and service standards Entertainment & Promotions Assist the Food & Beverage Director in sourcing, reviewing, and promoting musicians Design and implement promotional materials to increase revenue, covers, and profitability Develop and manage a Promotions Calendar for food and beverage outlets Manage special event concepts and execution Service Preparation & Presentation Ensure staff grooming meets ICHG personal presentation standards Confirm all equipment, glassware, lighting, music, and outlet setup are service-ready Prepare requirements for special occasions to enhance guest experience Service Delivery Ensure staff understand their roles in greeting, seating, order-taking, and payment handling Promote daily food and beverage specials through effective up-selling Maintain cleanliness of bar, work areas, ashtrays, and service stations Encourage guest interaction and product knowledge sharing Guest Care & Compliance Ensure guests are advised on alcoholic beverages, alcohol strengths, and responsible consumption Monitor guest intoxication levels and take appropriate action in line with liquor laws Enforce hotel smoking policies and local liquor regulations Handle guest complaints professionally and effectively Business Development & Financial Control Share guest feedback and market insights with the Chef and Food & Beverage Director Manage and utilize the customer database effectively Upsell property facilities and pursue cost-saving and recycling initiatives Control wage costs, beverage costs, forecasting, and stock management Analyze performance statistics and adapt operations to reflect customer preferences Leadership & Accountability Work flexible shifts (days, nights, weekends) to maintain full operational awareness Liaise with the Sales Manager during tender processes to secure new F&B accounts
