Roccella Italian | Full-Time Position

Roccella Italian is looking for an experienced and hands-on Restaurant Manager to lead our established, high-volume restaurant in East Melbourne, located directly opposite the Fitzroy Gardens.

This role is suited to a genuine hospitality professional who understands busy restaurant operations, leads confidently from the floor and is committed to delivering an excellent experience for both guests and staff.

Key Responsibilities

  • Lead and manage the restaurant’s daily operations
  • Supervise, motivate and develop the front-of-house team
  • Maintain high standards of service, presentation and guest experience
  • Manage staff rostering, labour costs and operational performance
  • Coordinate closely with the kitchen and senior management team
  • Handle customer feedback professionally and resolve issues effectively
  • Support recruitment, onboarding and ongoing staff training
  • Maintain compliance with RSA, food safety and workplace requirements
  • Monitor venue performance and help achieve agreed operational and financial targets
  • Continually improve systems, service standards and overall profitability

About You

  • Proven experience as a Restaurant Manager in a busy, high-volume venue
  • Strong leadership and people-management skills
  • Confident managing large teams and demanding services
  • Excellent communication, organisation and problem-solving abilities
  • Good commercial understanding of wages, costs and restaurant performance
  • Professional, reliable and calm under pressure
  • Passionate about hospitality and delivering excellent customer service
  • Available to work evenings, weekends and public holidays as required
  • Current RSA certificate
  • Full Australian working rights

Experience in quality Italian dining, large restaurants or multi-venue hospitality groups will be highly regarded.
