We are looking for an experienced, highly organised and commercially minded Restaurant General Manager to take responsibility for the day-to-day management and performance of our busy, established restaurant.

This is a senior position for someone who is confident taking ownership of the entire operation, leading a large team and ensuring the business runs efficiently, profitably and to an exceptionally high standard.

The successful candidate will work closely with the owner and will have significant responsibility for the people, financial performance, stock, systems and day-to-day running of the business.

Salary: depending on experience

Hours: Full-time, daytime operation

Key Responsibilities

People & HR

● Full management of the restaurant team, including both front-of-house and kitchen staff

● Recruitment, onboarding and staff training

● Staff performance management and development

● Managing attendance, holidays, absence and other HR matters

● Ensuring company policies and employment procedures are followed

● Leading and supporting supervisors and senior team members

● Building a positive, professional and accountable team culture

Labour & Rostering

● Preparing and managing weekly staff rotas

● Forecasting staffing requirements based on expected business levels

● Managing labour costs and ensuring staffing levels are commercially appropriate

● Monitoring staff productivity and performance

● Ensuring the restaurant is appropriately staffed at all times

Financial & Commercial Management

● Taking responsibility for labour-cost performance

● Monitoring sales and identifying opportunities to improve revenue

● Understanding gross profit, margins and controllable costs

● Working with the owner on forecasting, budgeting and business planning

● Identifying areas of unnecessary expenditure and implementing improvements

Stock & Purchasing

● Managing all restaurant ordering and purchasing

● Monitoring stock levels and ensuring appropriate stock rotation

● Implementing effective waste-management procedures

● Monitoring food and other stock costs

● Ensuring correct storage, rotation and stock-control procedures are followed

● Working with suppliers to ensure quality, availability and value

Operations

● Taking overall responsibility for the smooth day-to-day running of the restaurant

● Maintaining consistently high standards of service, food quality, cleanliness and presentation

● Ensuring kitchen and front-of-house teams work effectively together

● Managing and developing supervisors

● Dealing confidently with operational issues as they arise

● Ensuring all health & safety, food safety and operational procedures are maintained

● Driving continuous improvements across the business

About You

We are looking for someone who is hands-on, commercially aware and exceptionally organised, with the confidence and experience to take ownership of a busy restaurant.

You will ideally have:

● Significant experience managing a busy restaurant, café or hospitality operation

● Proven experience managing both kitchen and front-of-house teams

● Strong knowledge of labour management and rostering

● Experience managing HR and staff performance

● Excellent organisational and communication skills

● Strong commercial awareness and understanding of costs and margins

● Experience with stock control, purchasing and waste management

● The ability to lead, motivate and retain a large team

● A calm, practical approach to problem-solving

● The confidence to make decisions and take responsibility

● A genuine interest in developing people and improving the business

The Bar & Restaurant Manager is responsible for the day-to-day operation of the bar and restaurant, ensuring excellent customer service, strong team performance, efficient cost control, and full compliance with food safety, licensing, health and safety, and company procedures.

The role requires a hands-on manager who can lead from the floor, maintain high service standards, manage staff effectively, control stock and costs, and help grow sales and profitability.

Key Responsibilities

  • Manage the daily operation of the bar and restaurant.
  • Ensure customers receive a consistently high standard of service.
  • Lead, motivate, supervise and support front-of-house and bar staff.
  • Prepare staff rosters in line with business needs and wage budgets.
  • Organise staff breaks, shift cover and holiday cover.
  • Train new employees and provide ongoing coaching to the team.
  • Deal professionally with customer complaints and resolve issues promptly.
  • Maintain high standards of cleanliness, presentation and organisation throughout the premises.
  • Ensure opening and closing procedures are completed correctly.
  • Monitor service standards during busy periods and provide hands-on support when required.

  • Ensure compliance with alcohol licensing requirements and responsible service of alcohol.
  • Maintain health and safety standards and ensure accidents or incidents are recorded appropriately.
  • Ensure staff follow company policies, procedures and uniform standards.
  • Assist with recruitment, interviews, induction and performance management.
  • Address attendance, punctuality, conduct and performance issues where necessary.
  • Complete management reports and provide updates on sales, staffing, stock and operational issues.
  • Assist with budgeting, forecasting and financial targets.
  • Carry out any other reasonable duties required for the effective running of the business.
