ALEX & CO is an established restaurant, bar and functions destination in the heart of Parramatta.

As we enter our next stage of growth, we are investing heavily in our food and beverage offering, service standards, functions business, marketing and management team.

We are now looking for an experienced Restaurant & Operations Manager to take ownership of our day-to-day restaurant and bar operations and help drive the venue forward.

This is not simply a role about maintaining the operation. We are looking for a hands-on hospitality leader who can develop people, drive sales, improve performance and deliver an exceptional guest experience.

The Role

Reporting directly to the Managing Director, you will take responsibility for the performance and day-to-day operation of the restaurant and bar.

Your key responsibilities will include:

• Leading the day-to-day restaurant and bar operation
• Managing, developing and motivating the FOH team
• Driving exceptional service and guest experience standards
• FOH training, development and performance management
• Preparing and managing rosters in line with forecast sales and labour targets
• Driving revenue, average spend, beverage sales and upselling
• Monitoring waiter sales performance and team productivity
• Identifying opportunities to grow quieter trading periods and overall venue revenue
• Managing labour and operational costs without compromising service
• Overseeing bar performance and operational standards
• Monitoring stock, COGS, wastage and write-offs
• Managing restaurant administration, payroll inputs, supplier invoices and bookkeeper liaison
• Implementing and maintaining operational systems, procedures and SOPs
• Overseeing venue maintenance and day-to-day operational requirements
• Working closely with our Functions, Events & Marketing Manager to ensure functions and events are executed seamlessly
• Providing regular operational and commercial reporting to the Managing Director
• Identifying operational issues early and bringing forward practical solutions
• Taking responsibility for liquor licence compliance, RSA, incident management and licensed venue requirements as the venue's Licensee

About You

We are looking for someone with strong hospitality experience who understands that running a successful venue requires both great hospitality and strong commercial performance.

You will ideally have:

• Proven restaurant, bar or hospitality management experience
• Strong FOH leadership and service experience
• A genuine passion for hospitality and guest experience
• Strong commercial awareness and understanding of venue profitability
• Experience managing rosters, labour and staff productivity
• The ability to work with sales targets, KPIs and performance data
• Strong understanding of restaurant and bar operations
• Experience training, motivating and holding teams accountable
• Excellent organisation and communication skills
• The ability to remain calm and decisive in a high-volume environment
• A hands-on management style and strong follow-through
• Strong knowledge of RSA and licensed venue compliance
• The ability to work collaboratively across FOH, bar, kitchen, functions and senior management
