Entrata Pty Ltd is a well-respected hospitality business in Sydney, renowned for delivering exceptional Italian dining experiences. We are excited to expand our portfolio with the launch of a brand-new venue – Ciabatta Sydney, a boutique Italian-inspired deli offering premium imported cheeses, cured meats, sauces, artisan breads, house-made arancini, meatballs, pastries, and desserts. Ciabatta Sydney combines authentic Italian retail products with freshly prepared ready-to-eat food designed for busy professionals, local residents, and families.
We are seeking a Retail Manager to oversee the daily operations of Ciabatta Sydney. This is a full-time position (38 hours per week) based in North Sydney.

SKILLS & EXPERIENCE

• Minimum 2–3 years’ experience in deli, food retail, or hospitality management (Italian food experience highly regarded).
• Diploma or higher qualification in Retail Management, or at least three years of relevant experience.
• Strong leadership, communication, supervision and customer service skills.
• Proven ability to manage stock levels, supplier relationships, purchasing processes and overall retail operations.
• Highly organised, sales-driven, and able to meet operational and financial targets.
• Knowledge of food safety compliance essential; Food Safety Supervisor Certificate desirable.

• Organise and control the day-to-day operations of the Italian deli.
• Determine product mix, stock levels, and service standards across retail and ready-to-eat product lines.
• Supervise, roster, and train staff to maintain high service standards and compliance.
• Manage supplier relationships, purchasing, inventory, and stock control.
• Merchandise and maintain deli displays to maximise retail sales.
• Develop and implement marketing and promotional activities.
• Undertake budgeting, financial reporting, and daily cash reconciliation.
• Ensure compliance with food safety, workplace health and safety, and other regulatory requirements.
• Promote Ciabatta Sydney’s brand and deliver excellent customer service.
