TARGET OPENING: SEPTEMBER 2025 | FULL-TIME POSITIONS

We are seeking a highly skilled and experienced Robata Chef to join our culinary team. This is a senior-level position ideal for a chef with a deep understanding of traditional Japanese Robatayaki grilling techniques, as well as the ability to execute a refined and consistent dining experience.
As a Robata Chef, you will be responsible for overseeing the Robata grill station, preparing and grilling a variety of premium meats, seafood, and vegetables over charcoal, and ensuring the highest level of quality and presentation.

REQUIREMENTS:

  • Minimum 5 years of experience as a Robata or Japanese grill chef in a high-end or busy kitchen
  • In-depth knowledge of traditional Japanese grilling methods, ingredients, and presentation
  • Experience working with binchotan charcoal and managing an open flame grill
  • Strong knife skills and understanding of Japanese cuisine fundamentals
  • Ability to work efficiently under pressure while maintaining attention to detail
  • Excellent communication, leadership, and time management skills
  • Food handler’s certification (preferred)

Responsibilities
  • Lead the Robata grill station with precision and consistency
  • Prepare and cook high-quality Robatayaki dishes to order
  • Maintain proper grill temperatures and charcoal usage

  • Collaborate with the Executive Chef and kitchen team on menu development and seasonal specials

  • Train and mentor junior kitchen staff in Robata techniques when necessary
