Description Job Summary The Sanitation Technician is responsible for cleaning and sanitizing all production areas, equipment, and food-contact surfaces in the smoked salmon processing facility. This role is critical in ensuring compliance with food safety regulations, preventing contamination, and maintaining a safe and hygienic environment for seafood production. Key Responsibilities Clean and sanitize processing equipment (smokers, slicers, vacuum packers, conveyors, brining tanks). Perform daily sanitation of floors, walls, drains, ceilings, and work surfaces. Disassemble and reassemble equipment for deep cleaning. Use approved chemicals and sanitizers according to SOPs. Monitor and record sanitation activities in log sheets. Follow SSOPs (Sanitation Standard Operating Procedures). Identify and report any contamination risks, pest activity, or equipment issues. Support pre-operational inspections with QA team. Maintain proper chemical storage and labeling. Adhere to GMPs (Good Manufacturing Practices), HACCP, and food safety policies. Wear required PPE and follow safety protocols at all times. Requirements Required Qualifications High school diploma or equivalent (preferred). Previous sanitation or food processing experience preferred (seafood experience a plus). Ability to work in cold, wet environments. Ability to lift 40–50 lbs and stand for extended periods. Comfortable using chemicals and cleaning equipment. Basic understanding of food safety and hygiene practices. Ability to follow written and verbal instructions. Preferred Skills Experience in seafood or smoked fish facilities. Knowledge of HACCP, SSOP, GMP, and FDA/USDA food safety standards. Attention to detail and strong work ethic. Ability to work independently and as part of a team.
