The Lonsdale Hotel has been operated by the McCallum family for the past 36 years. We have recently completed building works that includes a new state of the art kitchen with a premium range of equipment, refurbished Bistro & a new multi-faceted function room.
We are searching for a new Senior Chef to join our team! This is an excellent opportunity for someone with a strong work ethic and a passion for food and hospitality to join our team. We are looking for an experienced chef who is comfortable with all facets of a commercial kitchen.
This position will report directly to the Head Chef.

Responsibilities

This is an exciting opportunity to join our talented kitchen team. The successful candidate will have a strong work ethic, a passion for food and be able to operate in all areas of our kitchen.

The responsibilities include;

  • Supervision of the daily kitchen operations and support to the Head Chef.
  • Train, guide and oversee junior kitchen team members and chefs.
  • Assist in menu planning, recipe development and food costing.
  • Ensure food quality, taste and presentation standards are maintained.
  • Monitor stock levels, ordering and minimise food wastage.
  • Enforce food safety, hygiene and workplace health & safety standards.
  • Maintain portion control and consistency across all dishes.
  • Lead the team during service and handle customer feedback if required with support from the Venue Manager.
  • Maintain kitchen record keeping and assist with staff scheduling and rosters.
  • Step in as Head Chef when required and directed to by the Head Chef whilst abiding by their directions and guidelines.

The right candidate will have the relevant qualification in Commercial Cookery (Cert III - SIT30821) and have a minimum of 3+ years of experience in a similar role.
