Senior Procurement Manager

We are seeking an experienced, strategic and commercially driven Senior Procurement Manager to lead the procurement function for a leading F&B organization operating 80 outlets and a Central Kitchen. This role is responsible for developing and executing procurement strategies that ensure supply continuity, cost optimization, product quality and operational excellence across the business.

Leading a team of 9 procurement professionals, you will oversee the end-to-end procurement of food, beverages, packaging, kitchen equipment, consumables and indirect spend while partnering closely with Operations, Central Kitchen, Finance, Culinary, Supply Chain and senior management to support business growth and profitability.

Key Responsibilities

Strategic Procurement

• Develop and implement procurement strategies that align with the company's business objectives and long-term growth plans.
• Oversee the procurement of all food and non-food products for 80 outlets and the Central Kitchen, ensuring consistent quality, availability, and cost competitiveness.
• Lead strategic sourcing, supplier consolidation, and category management initiatives to maximize value and reduce procurement risks.
• Establish long-term supplier partnerships and negotiate favourable commercial agreements, pricing, payment terms and service level agreements.
• Monitor commodity markets, global supply trends and regulatory changes to proactively manage supply risks and pricing volatility.

Commercial & Financial Management

• Drive procurement cost optimisation initiatives while maintaining product quality and service standards.
• Identify opportunities for value engineering, product standardisation, and process improvements.
• Manage procurement budgets, spend analysis, and key performance indicators (KPIs).
• Deliver sustainable cost savings through strategic sourcing, contract negotiations, and continuous improvement.

Operational Excellence

• Ensure uninterrupted supply of products to all outlets and the Central Kitchen to support daily operations.
• Collaborate closely with Central Kitchen, Operations, Culinary, Warehouse, and Logistics teams on production planning, menu development, new product launches, and inventory optimisation.
• Strengthen procurement governance, policies, and compliance with food safety, quality assurance, and company standards.
• Drive procurement digitalisation and process automation to improve efficiency, visibility, and reporting.

Leadership & Stakeholder Management

• Lead, coach, mentor, and develop a team of 9 procurement professionals, fostering a high-performance and continuous improvement culture.
• Build strong cross-functional relationships with internal stakeholders to align procurement strategies with operational requirements.
• Manage supplier performance through regular business reviews, quality assessments, and continuous improvement initiatives.
• Develop succession plans and strengthen procurement capabilities within the department.

Requirements

• Diploma or Bachelor's Degree in Supply Chain Management, Procurement, Business Administration, Logistics, or a related discipline.
• Minimum 10 years of procurement experience with at least 8 years in a senior leadership role within the F&B, hospitality, food manufacturing, or retail industry.
• Proven experience managing procurement for a large multi-site F&B operation and/or Central Kitchen.
• Strong expertise in strategic sourcing, supplier relationship management, contract negotiation and category management.
• Demonstrated success in delivering significant cost savings while maintaining quality and service levels.
• Strong commercial, financial, and analytical acumen.
• Experience with ERP and procurement systems, with advanced reporting and data analysis capabilities.
• Excellent leadership, communication, negotiation, and stakeholder management skills.
