KEY REQUIREMENTS:

  • Proven experience as a Senior Sous Chef, Sous Chef, or in a similar high-level kitchen role.
  • Strong culinary skills with the ability to produce 2 Rosette standard food consistently.
  • Extensive experience in a banqueting environment, with a focus on large-scale events and high-volume catering.
  • Passion for creating exceptional food and a keen interest in working with the freshest, locally-sourced ingredients.
  • Excellent leadership and team management skills.
  • Ability to work efficiently under pressure, particularly during weekends and busy events.
  • Excellent knowledge of food safety and kitchen hygiene regulations.

Responsibilities

ROLE OVERVIEW:

We are looking for a talented and experienced Senior Sous Chef to join our kitchen team at Copdock Hall. In this key position, you will assist the Head Chef in managing all aspects of kitchen operations, ensuring we maintain our high culinary standards in a banqueting environment while striving to achieve 2 Rosette standard restaurant food. This role requires a high level of dedication, creativity, and the ability to work well under pressure. You will be expected to work most weekends moving forward as we host events, functions, and banquets throughout the year.

KEY RESPONSIBILITIES:

  • Kitchen Leadership: Assist the Head Chef in overseeing daily kitchen operations, ensuring that food is consistently prepared to the highest standards.
  • Menu Creation: Work with the Head Chef to design and refine menus that reflect the seasonal produce and 2 Rosette dining standards, adapting to both restaurant and banquet needs.
  • Banqueting Focus: Ensure the efficient preparation and delivery of large-scale banquet meals, maintaining the same high-quality standards as our restaurant service.
  • Quality Control: Supervise the preparation and presentation of all dishes, ensuring consistency and excellence in both taste and appearance.
  • Team Management: Lead and motivate the kitchen team, providing guidance and training to junior chefs and kitchen staff, ensuring the smooth running of the kitchen during peak times.
  • Stock & Inventory Management: Oversee inventory control, manage stock levels, and place orders to ensure kitchen supplies are always fresh and in good supply.
  • Health & Safety: Maintain strict health, safety, and hygiene standards in the kitchen, ensuring that all food safety regulations are followed.
  • Event Support: Be heavily involved in food preparation for large-scale events, including weddings, corporate functions, and banquets, ensuring every dish meets our high standards.
  • Weekend Availability: This role will require you to work most weekends moving forward, ensuring that our kitchen delivers exceptional food during our busiest times. Flexibility and availability for weekends and occasional evening shifts are essential.
