SUMMARY OF POSITION

The Sommelier is a key player who utilizes their extensive knowledge of wine and intricate service operations to educate staff and guests, thereby elevating the wine program.

QUALIFICATIONS:

  • Expert knowledge of runner and server skills
  • Unprecedented work ethic
  • 2+ years of experience as a Sommelier in fine dining
  • Level 2 (+) certification through CMS
  • Works well in a fast-paced, chef-driven environment
  • Works collaboratively as part of a team
  • Strong communication skills and attention to detail
  • Thinks quickly and efficiently in high-pressure situations
  • Ability to carry a tray with food and/or drinks

PHYSICAL REQUIREMENTS:

  • Must be able to work on your feet for at least 8 hours
  • Must be able to move, pull, or lift at least 35 pounds
  • Must be able to climb stairs multiple times per shift
  • Must be able to carry a full tray with either hand
Responsibilities

ROLES AND RESPONSIBILITIES

  • Begins shift by recording all important reservation details (PONs, DRs, special instructions)
  • Participates in daily setup and breakdown of the wine, FOH stations, and guest-facing spaces
  • Independently completes tasks from sommelier checklists, including chilling wines
  • Maintains a complete knowledge of all table and seat numbers
  • Proactively stocks ample supplies of glassware, wine, and beverages for service
  • Verifies the quality of each bottle of wine before it is served to the guest
  • Provides wine and beverage service, including recommendations, to guests
  • Infrequently runs food and provides detailed dish descriptions to dining room guests
  • Maintains an expert knowledge of all food menus, including ingredients and techniques used
  • Monitors and ensures that all aspects of wine service conform to departmental standards
  • Maintains an expert knowledge of all the pairings utilized in any given menu
  • Accommodates all requests for information courteously
  • Ability to field guest complaints and find the resources (managers, coworkers) to resolve issues
  • Accomplishes all assigned side work throughout the shift
  • Collaborates with the team, takes direction from chefs, expediters, and dining room staff
  • Performs other duties as assigned by supervisors, managers, or chefs.
