For the next season (spring/summer 2026), we are looking for a Sommelier to join our Pool Grill Restaurant team. The ideal candidate is passionate about hospitality and comfortable with challenges. He/She is willing to provide authentic and luxury dining experiences, demonstrating care, confidence, curiosity and community. He/She should have exceptional taste and exemplary customer service skills. He/She reports to Restaurant Manager. Main duties & responsibilities: Anticipate guests needs and handle guest complaints, providing an excellent and personalized guest experience according to our service standards Cooperate with the Restaurant Manager for staff development Develop special events about wine Inventory and requisitions: assist in monitoring stock levels and ordering replacement deliveries. Avoid any waste and capable to control beverage margins Cooperate with the bar manager to establish the wine selection to use the pool bar and for the champagne bar Compliance with health and safety regulations Fully responsible for Banqueting wine orders and consumption Working experience of minimum 3 years within the same role in Luxury Hotel’s Industry Experience in Fine Dining Restaurant required (Michelin is a plus) Fluent in English and Italian; a third language preferred Sommelier AIS or FISAR Professional knowledge of Italian cuisine and Italian & International wines HACCP certification Other requirements: Effective communication, emotional intelligence, adaptability Collaboration: be able and willing to work as a team player Drive results: provide genuine and consistent high levels of service by anticipating and exceeding expectations of guests and colleagues Global perspective: treat each other with respect and inclusiveness regardless of position, level or background Belmond and you: We offer seasonal Labour contract according to C.C.N.L. Settore Turismo - Level 3, Sommelier Start date: April 2026 to End date: November 2026, with the aim of a continuous collaboration over subsequent seasons at Splendido and a career path. Responsibilities
