Job Description De Mondion, the Michelin-starred fine dining restaurant at The Xara Palace Relais & Châteaux in Mdina, is seeking a passionate and knowledgeable Sommelier to join its award-winning team. The ideal candidate will play a key role in delivering a world-class dining experience by guiding guests through the restaurant’s curated wine list and creating exceptional wine pairings that complement our contemporary Mediterranean tasting menus. Key Responsibilities Curate and maintain the restaurant’s wine list, ensuring a balanced selection of international and regional wines. Provide expert wine recommendations and pairings aligned with the restaurant’s tasting menus. Deliver professional tableside wine service including presentation, decanting, and proper serving techniques. Educate guests on wine characteristics, regions, vintages, and producers. Manage wine inventory, stock rotation, and cellar organisation. Assist in purchasing and liaising with wine suppliers and distributors. Collaborate with the culinary team to develop seasonal wine pairings. Ensure compliance with health, safety, and licensing regulations. Qualifications Requirements Previous experience as a Sommelier or Assistant Sommelier in a fine-dining or Michelin-starred environment. Strong knowledge of international wine regions, grape varieties, and food pairing principles. Formal wine certification (e.g., WSET Level 3+, Court of Master Sommeliers, or equivalent) is preferred. Excellent communication and guest-service skills. Ability to work in a fast-paced, high-standard hospitality environment. Strong organisational and inventory management skills. Fluency in English; additional languages are considered an asset.
