Description

SOMMELIER – TOWN, COVENT GARDEN

We’re looking for a knowledgeable and passionate Sommelier to join the front of house team at Town, our Covent Garden restaurant from chef-restaurateur Stevie Parle.
This is an exciting opportunity to be part of a high-quality, ingredient-led restaurant that strikes a balance between thoughtful service and a relaxed, welcoming atmosphere.

ABOUT THE PROJECT

Town is a celebration of seasonal British produce, brought to life through open-fire cooking, whole-animal butchery, and close partnerships with regenerative farmers. Led by acclaimed chef Stevie Parle—renowned for Dock Kitchen, Pastaio, and Craft London—the restaurant blends exceptional food, in-house production, and striking, design-forward environments.

We’re looking for someone who:

  • Has a warm, confident presence on the floor and thrives in guest-facing interactions
  • Brings at least 2 years of experience as a sommelier in a high-quality restaurant or wine-focused environment
  • Holds WSET Level 2 or above (or equivalent) with strong knowledge across both old and new world wines
  • Is skilled at curating and managing a wine list, including stock control and supplier relationships
  • Can deliver engaging recommendations and pairings, tailoring suggestions to individual guest preferences
  • Is proactive, guest-focused, and a strong team player, able to support service across the floor when needed
  • Is curious about food, produce, and beverages, with a genuine passion for hospitality
  • Thrives in a fast-paced environment without compromising on care or detail

Pay & Benefits

  • £17.50 per hour (including tronc)
  • 45 hours/week, across 5 days
  • 29 days holiday per year
  • Daily staff meals
  • Personal development and structured training (including wine education support)
  • Opportunities for internal progression as the group grows
  • Staff discounts and regular team incentives
  • Company pension scheme

If you’re excited by honest ingredients, thoughtful wines, collaborative service, and the buzz of Town — we’d love to hear from you.
