The hotel features 239 well-appointed rooms, along with a great restaurant, a cafe, bar, heated rooftop swimming pool and gym. Business guests are well catered for at Mercure Perth with 6 modern meeting rooms available, accommodating up to 350 delegates. Job Description Mercure Perth is seeking a motivated and skilled Sous Chef to support our Head Chef in Food & Beverage and Kitchen operations. You will manage daily food preparation, production, and menu implementation to deliver innovative, safe, and high-quality cuisine that meets guest expectations and budget guidelines. Key responsibilities include: Hands-on management of restaurant, room service, and conference food operations. Collaborate with service teams to ensure consistent quality and service for guests. Maintain food standards, preparation, presentation, and cooking techniques to meet Brand Standard guidelines. Oversee kitchen operations in the absence of the Head Chef. Maintain hygiene and safety standards in line with Health & Safety and HACCP requirements. Foster a positive work environment, supporting team development and training. Coordinate with Restaurant/Bar Managers and Conference Sales teams to meet operational objectives. Manage food costs within budget, inventory control, and purchasing coordination. Represent Accor professionally to guests, suppliers, and partners. Guest Relations & Culture: Lead by example in delivering exceptional customer service. Support and empower team members, promoting inclusion and respect. Uphold Accor’s Heartist values and contribute to a positive team culture. Workplace Health & Safety (WHS): Follow safe work practices and participate in risk assessments. Maintain hygiene standards and report hazards promptly. Qualifications Qualifications Trade qualifications in cookery. Previous experience in the hotel or hospitality industry. Strong knowledge of food safety requirements. Service-oriented with attention to detail. Ability to work independently and as part of a multicultural team. Strong communication, interpersonal, and time management skills.
