Sous Chef - Full Time (Please note that you must already have work rights in New Zealand to be considered for this role) We are currently seeking an experienced full time Sous Chef to join our kitchen brigade on a full-time basis (40 hours/week). You’ll play a key role in leading the team across service and production, driving kitchen efficiency, and supporting menu and product initiatives alongside the Kitchen leadership team. Key Responsibilities will include: * Lead from the front and set the standard for presentation, cleanliness, pace, and consistency across the kitchen. * Plan and prioritise daily production by allocating work clearly, keeping prep targets realistic, and stepping in where required during busy service periods. * Develop section capability by cross-training the team and maintaining clear prep lists, recipes, and handovers so the kitchen can run confidently in your absence. * Drive an organised and efficient operation by monitoring prep levels, preventing bottlenecks, and ensuring opening, close-down, and cleaning routines are completed to standard. * Embed strong cost control habits through portioning, yield management, stock rotation (FIFO), correct storage, and waste reduction, while coaching the team to follow these practices daily. * Support menu and service development with the Kitchen leadership team by contributing ideas, assisting with trials, and helping implement changes consistently. * Maintain high food quality and presentation standards across in-room dining service, ensuring dishes are prepared efficiently and delivered consistently during service. * Work closely with the wider kitchen team to support smooth day-to-day operations across IRD and other service areas as required. Skills & Experience * Level 4 (or equivalent) cookery qualification, with solid technical foundations and confidence across core cooking methods. * Minimum 1 year Sous Chef experience in a 5-star or high-volume environment, ideally with experience in hotel dining, à la carte service, or in-room dining operations. * Strong leadership and communication skills, with the ability to give clear direction, coach others, and maintain a professional kitchen culture. * Current food hygiene certificate, with strong knowledge of food safety and allergen management. * Proven ability to perform under pressure while maintaining quality, consistency, and attention to detail. * Must be flexible to work on a rotating roster over 7 days, including mornings, evenings, weekends, and public holidays.
