Looking for an Sous Chef for G.LION Hawaii at The Ritz Carlton Waikiki. The sous chef duties will include overseeing all aspects of the F&B program throughout lunch and dinner services. Working closely with the other chefs on property to ensure the highest level of service to our guests.
The Sous Chef is responsible for assisting the Chefs in handling all aspects of the kitchen operation, including but not limited to the maintenance and development of the food to the highest quality. All duties are to be performed in accordance with Chef’s Standards, with adherence to recipes and disciplines.

REQUIREMENTS:

  • Previous experience as a sous chef or in a similar role
  • Strong knowledge of culinary techniques and practices
  • Excellent leadership and communication skills
  • Ability to work in a fast-paced environment
  • Attention to detail and ability to multitask
  • Knowledge of food safety and sanitation regulations

Solera is located at The Ritz Carlton, by Fort DeRussy Park. We are a New American restaurant open Sunday - Saturday. Our service style includes table-side touches, multi-course curated experiences, and beverage pairings.
Quiora is also located at The Ritz Carlton. Quiora offers a standard breakfast, lunch, and pool service for the hotel, but their identity lives through dinner, which is Italian-inspired. It features open-air dining. At Quiora, the core of our menu revolves around the fresh artisan pastas made by hand every day, along with a beautiful selection of unique entrées, such as seasonal fish and house cut steaks, and Italian classics all perfect for sharing.

Responsibilities
  • Assist the head chef in preparing and cooking high-quality dishes
  • Work closely with the cooks to establish and maintain control of the brand standards for purchasing and receiving items.
  • Collaborate with the culinary team to create new menu items
  • Ensure food quality and presentation meets the restaurant’s standards
  • Monitor inventory and order supplies as needed
  • Train and mentor junior kitchen staff
  • Maintain budgeted labor costs as well as potential food cost by forecasting volume to maximum profitability by avoiding over/under production
  • Maintain a hygiene level above that required by the local Health Department and ensure that food sanitation, safety, and proper food handling functions are practiced daily
  • Communicate with chefs, management, employees, and guests efficiently, with proper reporting and meetings
