Sous Chef – Il Corvo, North Vancouver
Il Corvo is a new Italian restaurant opening in North Vancouver in 2025. Rooted in tradition and driven by simplicity, Il Corvo will celebrate handmade pasta, seasonal ingredients, and thoughtful hospitality. We’re looking for a dedicated and skilled Sous Chef to support our Executive Chef and play a key role in shaping the day-to-day operations of our kitchen.
The Role
As Sous Chef, you’ll support the Executive Chef in building a high-performing, collaborative kitchen team. You’ll help ensure consistency, quality, and smooth service, stepping in to lead when needed. This role is hands-on and focused on execution, accountability, and mentorship. What You’ll Be Doing

  • Support Standards & Procedures: Work with the Executive Chef to uphold operational standards and maintain consistent systems across the kitchen.
  • Recipe Development & Features: Collaborate on recipes and specials that reflect Il Corvo’s vision and seasonal focus.
  • Lead in Absence of Executive Chef: Ensure staff accountability, delegate tasks, and maintain smooth operations when the Executive Chef is not present.
  • Coordinate & Assist Kitchen Staff: Provide support and guidance to team members, ensuring efficient service and collaboration.
  • Ordering & Inventory: Place orders with designated suppliers when needed to maintain proper stock levels.
  • Incorporate Feedback: Help implement staff and guest feedback to refine offerings and resolve issues.
  • Maintain Quality Standards: Ensure every dish meets the highest standards of flavour, presentation, and consistency.

Who You Are

  • At least 2 years of experience in a Sous Chef or senior line cook role
  • Passionate about Italian cuisine and handmade pasta (direct experience is a strong asset)
  • A natural team player who leads by example and fosters a positive, accountable kitchen culture
  • Strong organizational skills with experience in ordering, inventory, and cost awareness
  • Calm, dependable, and solutions-focused during high-volume service
  • Food Safe Level 1 required; Red Seal or formal culinary training is a plus

Compensation & Benefits

  • Salary: $50,000–$60,000 annually plus tips
