Sous Chef – Full-Time

Casa Comida Pty Ltd, trading as Brazilian Flame Bar & Grill, has an excellent opportunity for an experienced full-time Sous Chef to join our kitchen leadership team in Surfers Paradise.

Brazilian Flame is a busy Brazilian churrascaria and rodizio restaurant offering traditional fire-roasted meats, Brazilian dishes and Australian specialities in a high-volume hospitality environment.

Location: Surfers Paradise, Gold Coast QLD 4217

Employment type: Full-time

Salary: 79,500-82,000 per annum plus superannuation

The successful candidate will be responsible for:

  • Assisting the Head Chef with the day-to-day management of kitchen operations
  • Supervising food preparation, cooking, plating and service
  • Preparing and cooking Brazilian-style dishes and fire-roasted meats
  • Ensuring consistent food quality, presentation and portion control
  • Creating and developing menu items, recipes and preparation procedures
  • Supervising kitchen sections and coordinating service during busy periods
  • Assisting with staff rosters and allocation of kitchen duties
  • Training, supervising and supporting chefs, cooks and kitchen attendants
  • Managing kitchen ordering and liaising with suppliers
  • Completing and reviewing weekly stocktakes
  • Monitoring food costs, wastage and kitchen performance targets
  • Ensuring compliance with food-safety, hygiene and workplace health and safety requirements
  • Maintaining kitchen equipment, cleanliness and operational standards
  • Liaising with the Restaurant Manager and front-of-house leadership team
  • Assuming responsibility for kitchen operations in the Head Chef’s absence

Applicants should possess:

  • A minimum Certificate IV in Commercial Cookery or an equivalent qualification
  • At least two years of relevant experience as a qualified Chef, including supervisory responsibilities
  • Experience working in a busy, high-volume restaurant kitchen
  • Demonstrated experience training and managing kitchen employees
  • Strong knowledge of stock control, ordering, food costing and waste management
  • A sound understanding of food safety and workplace health and safety requirements
  • Excellent communication, leadership and organisational skills
  • The ability to perform effectively in a high-pressure environment
  • Availability to work evenings, weekends and public holidays as required

Experience with Brazilian cuisine, churrasco, rodizio service or charcoal and flame cooking would be highly regarded.

This is a full-time, ongoing position based at Brazilian Flame Bar & Grill in Surfers Paradise.
