You’ll support the Senior Sous Chef in leading a passionate brigade, running smooth and efficient services, and maintaining the highest standards of food quality, hygiene, and organisation. Responsibilities and Duties: Support the Head Chef and Senior Sous Chef in all aspects of kitchen management Run and supervise services to a 2 Rosette standard and in our family restaurant, Ogo Maintain calm, clean, and efficient working conditions Mentor and train junior team members Contribute creative ideas to menu planning Uphold food hygiene and kitchen safety standards Manage stock levels, deliveries, and minimise waste Lead by example and promote a positive kitchen culture Qualifications: Previous experience as a Sous Chef or strong Junior Sous in a quality-driven kitchen Food hygiene and safety certificates (Level 2 or higher preferred) Knowledge of modern and classic cooking techniques Key Skills: Strong organisational and leadership abilities Calm under pressure with confident service management Passion for local sourcing, seasonality, and sustainability Effective communication and teamwork Self-motivated and proactive What we offer: £14.50 hourly rate plus a share of hotel tips A people-centric working environment Learning and internal career progression opportunities Permanent contract with 28 days holiday (29 after 1 year) Long service scheme – enjoy a free stay at Bedruthan after your first year! 40% off food and drinks and other hotel services Local partnership discounts Health Shield Healthcare Plan Temporary team accommodation available This is a fast-paced, creative space where talented chefs thrive.
