Overview
With growth on the horizon, we’re seeking an experienced and passionate Assistant Head Chef / Sous Chef to help launch our new opening in Central London. Ria’s is one of London’s top pizza and natural wine spots, specialising in Detroit-style and pan pizza’s. Recognized as one of the city’s top destinations for pizza by both The Times and Time Out London, we’ve built our reputation on exceptional quality, innovative approach to Detroit-style pizza, and a carefully curated natural wine selection.

Responsibilities

  • Lead services and execute on our signature Detroit-style pizza
  • Work closely with the Head Chef to implementing processes, prep-schedules, training and systems
  • Managing and overseeing our dough and prep schedules
  • Maintaining and driving our pizza standards and consistency
  • Performing weekly stock counts and orders
  • Ensuring compliance with health and safety regulations
  • Reporting on H&S checklists, stock variance and GP margins, sales targets and quality audits

Experience / Requirements

  • Minimum 3 years experience in a similar role, with specific experience in pizza-making
  • Strong leadership and team management skills
  • Strong understanding of dough production and stock management
  • Knowledge of food safety regulations and HACCP principles
  • Strong organisational and time management skills
  • Interest in natural wines and broader culinary sets
