QUALIFICATIONS:

  • Commercial cookery qualification
  • Food safety, hygiene and HACCP qualifications
  • WHS Training

EXPERIENCE:

  • Supervisory experience in a multifaceted operation

COMPUTER SKILLS:

  • Proficiency in Microsoft Office Suite
  • Familiarity with Momentus or events software is desireable
  • Report equipment repairs and maintenance requirements promptly

Responsibilities

WHY YOU WILL ENJOY THIS ROLE…

An exciting opportunity exists for an experienced Sous Chef at Sydney Showground. This is a rare opportunity to join a venue which hosts the one of the largest ticketed event in the southern hemisphere, the Sydney Royal Easter Show. Don’t let this opportunity slide by.
Reporting to the Executive Chef, this position plays a pivotal role in ensuring seamless event operations. Your mission is to oversee the allocation of resources and manage day-to-day event operations with unwavering enthusiasm, all while adhering to the highest standards set by Sydney Showground.

You will be responsible for a range of services including, but not limited to:

  • Ensure compliance with the Food Safety Plan and maintain high food standards in quality and presentation
  • Manage and supervisor casual staff, including creating rosters and providing feedback on their performance
  • Collaborate with the Executive Chef and Executive Sous Chef on menu development and food standards
  • Maintain proper stock rotation and manage monthly stocktakes
  • Be aware of and control food and labour costs
  • Act as a Team Leader, providing pre-event briefings and accepting higher responsibilities during the Sydney Royal Easter Show
  • Uphold excellent kitchen hygiene standards
  • Report equipment repairs and maintenance requirements promptly
  • Maintain a positive working relationship across the organisation

Hours for this role are based on a 5 day roster across a 7 day week according to event requirements. The nature of the events industry means that this role requires some weekend, evening and public holiday work around events being staged at Sydney Showground or by the RAS.
