THE OLD SILK MILL NEEDS LITTLE OR NO INTRODUCTION TO ANYONE WHO EATS AND DRINKS IN THE DERBY AREA. HAVING BEEN PUB OF THE YEAR ON NUMEROUS OCCASIONS, IT DELIVERS ONE OF THE MOST CUTTING EDGE AND CONTEMPORARY FOOD OFFERS IN THE DERBY AREA.

Working with an established team a sous chef will assist the head chef and our excellent Michelin trained executive chef Wayne Rodgers, in delivering exciting pub fayre. A sous chef should be familiar and comfortable with most areas of a commercial kitchen.
We’re a busy, expanding business with a strongly gelled team of chefs, front-of-house and management. If you’re a friendly and approachable person, hard working with a good sense of humour to mirror what can only be described as an ‘enjoyable’ vibe within the team and importantly deliver and maintain the attention to detail required by the owners, then we’d love to hear from you. We currently operate 4 sites and looking to open a 5th, so there is ample scope for development within the company.
We would consider a senior Chef de Partie ready for their first Sous position.
In line with the requirements of the Asylum and Immigration Act 1996, all applicants must be eligible to live and work in the UK. Documented evidence of the eligibility will be required from candidates as part of the recruitment process.

REQUIREMENTS OF THE SOUS CHEF:

  • Have previous experience in a similar environment.
  • Work with a team to create seasonal menus and specials.
  • Excellent communication skills.
  • Show commitment and determination.
  • Be passionate about exceeding guest expectations with flair, presence and food style.
  • Have some knowledge of the food industry and be passionate about fresh, local, ingredients. A creative and ambitious approach is a must.
  • Ensure the business delivers a great, fresh and consistent product, time and time again.
  • Prepared to learn from our chefs and knowledgeable owner Marin Roper.
