Job Description We are seeking a skilled and creative Sushi Chef to join our culinary team in the beautiful island of Phu Quoc, Vietnam. As a Sushi Chef, you will be responsible for creating exceptional sushi and Japanese cuisine, ensuring the highest standards of food quality and presentation. Prepare and serve a variety of sushi dishes, including nigiri, maki, and speciality rolls Ensure the freshness and quality of all ingredients, with a focus on locally sourced seafood Maintain a clean and organised workspace, adhering to food safety and hygiene standards Collaborate with the kitchen team to develop new menu items and seasonal specials Train and mentor junior chefs in sushi preparation techniques Manage inventory and place orders for necessary ingredients and supplies Interact with guests, providing information about menu items and preparation methods Adapt traditional Japanese techniques to incorporate local Vietnamese flavours and ingredients Qualifications Minimum 3-5 years of experience as a Sushi Chef in high-volume restaurants Exceptional knife skills and proficiency in various sushi preparation techniques In-depth knowledge of Japanese cuisine, culture, and dining etiquette Strong understanding of food safety practices and current health and hygiene regulations Ability to work efficiently in a fast-paced environment whilst maintaining attention to detail Excellent communication and teamwork skills Creativity and passion for developing innovative sushi dishes Proficiency in operating and maintaining kitchen equipment Culinary degree or diploma preferred Current food safety certification Familiarity with local seafood and ingredients in Phu Quoc, Vietnam is advantageous Ability to speak English; knowledge of Vietnamese or Japanese is a plus Additional Information What awaits you...
