SUMMARY:
The Sushi Chef de Partie is responsible for preparing sushi and sauces primarily in back-of-house areas, with occasional front-of-house service for members and guests. This position requires strict adherence to proper food handling, sanitation practices, and safety standards, particularly when working with raw fish and other sushi ingredients.
Essential Duties and Responsibilities:
· Ensures workstation is clean and sanitary.
· Assists with menu development and creating signature dishes.
· Greest and serves members and guests in a friendly and efficient manner; resolves any concerns promptly.
· Safely handle and prepare ready-to-eat raw food items in compliance with food safety regulations.
· Handles, stores, labels, and rotates foods properly and in accordance with public health safety, state, and local laws.
· Breaks down and cleans workstation at the end of service.
· Conforms with and abides by all regulations, policies, work procedures, and instructions.
· Communicates with members, co-workers, management, staff, and the general public in a courteous and professional manner.
· Maintain a professional appearance and demeanor that reflects the standards of Port Royal Club.
· Performs other duties as assigned by the Culinary Supervisor, Sous Chef, Chef de Cuisine, and Executive Chef.
Knowledge, Skills, and Abilities:
· Proficient in making sushi rolls with attention to creativity and presentation.
· Basic knife skills required.
· Requires solid understanding of food preparation.
· Ability to stand in one place for extended periods of time.
· Ability to interact professionally and maintain effective working relationships with superiors, co-workers, and members.
· Must be able to multi-task and work in a fast-paced environment.
· Ability to add, subtract, multiply and divide in all units of measure using whole numbers, common fractions, and decimals. Ability to compute rates, ratios, and percentages.
· Ability to read, write, comprehend correspondence and communicate well in English.
· Ability to follow written, oral, and diagram instructions using common sense and sound judgment. Education and/or Experience:
· High school diploma or general education degree (GED)
· Minimum of 2 years related experience or training; or equivalent combination of education and experience.
· Prior experience in a sushi preparation role is required.· Valid ServSafe Food Handler Certificate required. Qualifications:
