Key Responsibilities for Sushi Cook Cruise Ship Jobs Prepare, roll, and artfully present a variety of sushi and sashimi according to our cruise line’s signature recipes, safety, and presentation standards. Work in rotation across multiple sushi stations, providing support for a la carte restaurant service, buffets, and private or themed events onboard. Assist in mise-en-place, ingredient preparation, and daily restocking to ensure seamless, timely sushi service for guests. Maintain a clean, organized workstation while upholding the highest standards of food safety, USPH, and HACCP protocols specific to raw and cooked seafood. Collaborate closely with sushi chefs, kitchen leadership, and culinary teammates in a fast-paced, multicultural environment. Offer exceptional customer service by responding to guest dietary needs and special sushi orders with flexibility and accuracy. Support regular inventory control, including reporting shortages, assisting in stock rotation, and minimizing waste in line with the cruise line’s sustainability goals. Contribute to team training and foster a culture of diversity, inclusivity, and continuous improvement within the sushi kitchen staff. Requirements for Sushi Cook Cruise Ship Roles Minimum 2 years of sushi cook or sushi chef experience in high-volume hotels, upscale restaurants, resorts, or cruise ships. Formal culinary or sushi-specific certification preferred, but equivalent professional experience will be considered. Strong technical knowledge of sushi rice preparation, fish cutting, knife skills, food safety, and traditional as well as contemporary sushi techniques. Excellent understanding of food allergens, special diets, and strict hygiene practices related to raw seafood handling. Proven ability to consistently deliver high-quality plate presentation and taste under pressure. Strong organization and time management abilities, with flexibility to adapt to changing service needs and schedules. Good English language communication skills are required; additional languages are a plus. Day-to-Day Sushi Cook Duties on a Cruise Ship Produce nigiri, maki, sashimi, and specialty rolls for restaurant, buffet, or room service as assigned by sushi leadership. Assist with sushi bar setup, guest interaction during live sushi-making presentations, and participate in theme nights and special seafood events. Carefully monitor ingredient freshness and quality, ensuring all products meet strict cruise line standards and maritime regulations. Participate in regular deep cleaning, sanitization, and knife/equipment maintenance schedules for sushi kitchen safety and compliance. Additional Cruise Ship Sushi Cook Requirements and Qualifications Willing and able to live and work onboard a cruise ship for 6–8 month contracts, with travel to multiple international ports. Valid passport and US C1/D visa required for embarkation. Successful completion of a pre-employment English assessment. Medical clearance as required by international maritime law.
