What You’ll Do: As a Sushi Cook, you’ll prepare and assemble fresh sushi products in our shared production facility. You’ll work with both automated and manual sushi-making equipment to help deliver consistent, high-quality products every day. Responsibilities include: Preparing sushi rice, seafood, and vegetables following Hissho’s standardized recipes. Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified Rolling and cutting sushi using Suzumo automated machines. Following batch sheets and production targets for accuracy and efficiency. Packaging and labeling finished trays using BOHA terminals. Maintaining strict food safety and sanitation standards (HACCP/GMP). Assisting with daily setup, cleaning, and equipment sanitation. Supporting continuous improvement and process consistency across the team. Requirements 1+ year experience in high volume sushi production (restaurant or manufacturing). Basic understanding of food safety and sanitation. Comfortable working evenings or overnight shifts. Able to lift up to 50 lbs and stand for long periods. ServSafe certification (or willingness to obtain). Ability to effectively communicate in English. Preferred: Experience using Suzumo or similar sushi rolling/cutting machines. Familiarity with ready-to-eat (RTE) food manufacturing. Knowledge of BOHA labeling systems. Missouri Seafood HACCP certification Why Hissho? Competitive hourly pay with growth opportunities.
