Company Description Fairmont Tokyo open on July 1, 2025 Job Description We are seeking a talented and passionate Sushi Junior Sous Chef to join our esteemed culinary team in the heart of Tokyo, Japan. As a key member of our kitchen staff, you will assist the Head Chef and Sous Chef in creating exceptional sushi dishes that delight our guests and uphold the highest standards of Japanese cuisine. Assist in the daily operations of the sushi kitchen, ensuring smooth workflow and high-quality output Prepare a wide variety of sushi dishes, including nigiri, maki, and specialty rolls Maintain strict adherence to food safety and hygiene standards Collaborate with the kitchen team to develop new menu items and seasonal specials Manage inventory and assist with ordering supplies Train and mentor junior kitchen staff in sushi preparation techniques Ensure consistency in food quality, presentation, and portion control Assist in menu planning and cost control measures Maintain a clean and organized work environment Qualifications 3-5 years of experience in sushi preparation, preferably in a high-volume restaurant setting Exceptional knife skills and proficiency in various sushi preparation techniques In-depth knowledge of Japanese cuisine, specifically sushi Strong understanding of food safety and hygiene practices Ability to operate and maintain kitchen equipment efficiently Experience in inventory management and menu planning Excellent teamwork and communication skills Ability to work in a fast-paced environment while maintaining attention to detail Culinary degree or diploma preferred Current food safety certification Fluency in Japanese language (speaking and reading) required Passion for culinary arts and commitment to continuous learning and improvement Work permission in Japan is necessary Job-Category: Culinary Job Type: Permanent Job Schedule: Full-Time
