The Sushi Cook is responsible for preparing and presenting high-quality sushi dishes, including rolls, sashimi, and nigiri, with precision and artistry. This role requires deep knowledge of sushi preparation techniques, food safety standards, and a commitment to excellence in both taste and presentation. Requirements Exemplify the Triple T Hospitality Experience: Dedicate oneself to delivering GREAT guest service, consistently going above and beyond for both team members and guests. Prepare sushi menu items including rolls, nigiri, sashimi, and specialty dishes according to established recipes and presentation standards. Ensure freshness and quality of all sushi ingredients, including fish, vegetables, and rice. Maintain proper storage and handling of raw fish and other perishables. Monitor and maintain sushi station cleanliness and organization. Follow portion control guidelines and minimize waste. Conduct regular inventory checks and communicate shortages to the Assistant Kitchen Manager. Maintain a clean and sanitary work environment in compliance with health and safety regulations. Collaborate with kitchen and front-of-house staff to ensure timely and accurate order fulfillment. Assist in training new sushi staff members. Stay current with sushi trends and techniques to enhance menu offerings. KNOWLEDGE, SKILLS AND ABILITIES REQUIRED: Prior experience as a sushi cook or in a sushi-focused kitchen environment. Proficiency in sushi preparation techniques including knife skills, rice preparation, and fish handling. Strong attention to detail and artistic presentation. Knowledge of food safety standards, especially regarding raw fish. Ability to work in a fast-paced, high-volume restaurant setting. Familiarity with sushi tools and equipment (e.g., sushi knives, bamboo mats). Excellent communication and teamwork skills. Ability to stand for extended periods and lift heavy objects as needed.
