Company Description Fairmont Tokyo open on July 1, 2025 Job Description We are seeking a talented and passionate Teppan-yaki Junior Sous Chef to join our esteemed culinary team in Tokyo, Japan. As a key member of our kitchen staff, you will assist in creating unforgettable dining experiences for our guests through your expertise in teppanyaki-style cooking and leadership skills. Assist the Head Chef and Sous Chef in overseeing daily kitchen operations, focusing on the teppanyaki station Prepare and cook a variety of dishes using teppanyaki techniques, ensuring high-quality presentation and taste Maintain cleanliness and organization of the teppanyaki cooking area Train and mentor junior chefs in teppanyaki cooking methods and techniques Collaborate with the culinary team to develop new menu items and seasonal specials Ensure compliance with food safety and sanitation standards Assist in inventory management and ordering of ingredients Participate in menu planning and cost control measures Provide excellent customer service by interacting with guests during teppanyaki performances Qualifications Culinary degree or diploma from a recognized institution Minimum 3-5 years of experience in teppanyaki cooking, preferably in a high-end restaurant or luxury hotel setting Strong knife skills and proficiency in teppanyaki cooking techniques In-depth knowledge of Japanese cuisine, ingredients, and culinary traditions Current food safety and sanitation certification (e.g., ServSafe) Excellent communication and teamwork skills Ability to work efficiently in a fast-paced environment Physical stamina to stand for extended periods and work in a hot kitchen Strong leadership and mentoring abilities Fluency in English; Japanese language skills are highly desirable Work permission is Japan is necessary Previous experience as a sous chef or in a leadership role is preferred Passion for culinary innovation and commitment to delivering exceptional dining experiences Job-Category: Culinary Job Type: Permanent Job Schedule: Full-Time
