QUALIFICATIONS:

  • Minimum 3-5 years of experience as a Sous Chef or in a leadership role in an Italian restaurant.
  • Strong expertise in traditional and modern Italian cuisine, including pasta-making, sauce preparation, and plating techniques.
  • Proven ability to lead, inspire, and train a team, fostering a collaborative and high-performing kitchen environment.
  • Experience working in Calgary’s culinary scene with knowledge of local suppliers and seasonal ingredients.
  • Exceptional organizational and multitasking skills, with attention to detail and consistency.
  • Strong understanding of inventory control, cost management, and food waste reduction.
  • Valid Food Safety and Handling Certification (or willingness to obtain).
  • Passionate about Italian cuisine and delivering exceptional dining experiences.
  • Ability to thrive in a fast-paced, high-pressure environment while maintaining composure and excellence.
Responsibilities
  • Assist the Executive Chef in overseeing all aspects of kitchen operations, maintaining high culinary and quality standards.
  • Lead and mentor kitchen staff, providing hands-on training and fostering a culture of teamwork, respect, and innovation.
  • Supervise daily food preparation to ensure each dish meets our high expectations in taste, presentation, and authenticity.
  • Collaborate on menu development, introducing seasonal, locally inspired Italian dishes that excite and delight our guests.
  • Monitor kitchen inventory, manage orders, and control food costs to align with budgetary goals.
  • Ensure compliance with health, safety, and sanitation regulations, maintaining a clean and efficient workspace.
  • Play a key role in managing scheduling, labor costs, and workflow efficiency, ensuring seamless kitchen operations.
  • Maintain a positive, high-energy, and professional kitchen environment that encourages growth and creativity.
  • Work in sync with FOH management to ensure smooth service and exceptional guest experiences.
