Description The role of Traveling Food Service Director entails comprehensive oversight and management of food service operations across multiple correctional facilities. The director is tasked with ensuring the consistent provision of safe, nutritious, and high-quality meals to individuals housed within these facilities. Expertise in leadership and operational management is essential for upholding regulatory compliance, maintaining established standards, and promoting a constructive food service environment. This is a Remote, Full Time, Weekends and Holidays as needed opportunity. Requirements Essential Duties and Responsibilities: Remote; Full Time: Weekends and Holidays as needed. Oversee and participate in meal preparation, cooking, and service to uphold quality standards, appropriate portioning, and nutritional guidelines. Monitor food production activities to ensure consistency and reduce waste. Review and manage inventories of food items, supplies, and equipment. Coordinate effectively with vendors and suppliers to guarantee timely deliveries and product excellence. Thorough understanding of budgets related to food costs, labor, and supplies. Implement cost-efficiency strategies while maintaining superior food service standards. Provide training, follow-up and accountability for kitchen staff and food service personnel. Conduct performance evaluations, deliver constructive feedback, and enforce safety as well as operational protocols. Ensure compliance with health, safety, and sanitation regulations, including HACCP, OSHA and PREA requirements. Perform routine inspections to sustain cleanliness and meet food safety criteria. Maintain accurate records regarding food inventory, production, and expenditures. Prepare reports and actively participate in meetings with facility management, District Manager and company. Promote positive working relationships among correctional facility staff, inmates, and Skillet Kitchen employees. Address concerns, resolve operational issues, and maintain customer satisfaction with food service operations. Ability and willingness to travel extensively (75%–100%) is required for this role. Perform additional assigned duties as required Required Job Skills: Food Management degree with 5+ years in operations or equivalent work experience, including at least 5 years in leadership, or equivalent work experience. Able to work in a secure corrections setting. Proficient in English Proficiency in standard business technology tools, including Microsoft applications, email communication, collaboration platforms (Teams), scheduling systems, inventory management, and ordering systems. Understands nutrition, dietary guidelines, and food safety; ServSafe certification required. Knowledgeable and Skilled in batch, bulk, and short order. Demonstrates leadership through clear communication, consistency, adaptability, and integrity. Can handle multiple priorities and perform well under pressure in correctional environments. Working Conditions: The workplaces are located within correctional facilities, so you must follow strict security procedures and standard operating protocols at the local and regional levels. The role requires flexible scheduling to supervise meal preparation and maintain smooth operations. Travel expectations range from 75% up to 100%. You need the physical ability to stand for as long as 8 hours, repeatedly lift, and move food supplies and equipment.
