Job Description We're looking for an experienced Turkish Baklava Specialty Chef to join our culinary team in Phu Quoc, Vietnam. In this role, you will be the creative force behind our authentic Turkish baklava offerings, bringing traditional techniques and innovative flair to our pastry program. You will oversee the preparation, presentation, and quality of all baklava products while maintaining the highest standards of culinary excellence and food safety. This position offers the opportunity to showcase your expertise in Turkish pastry arts while contributing to a dynamic kitchen environment in a vibrant island destination. Prepare and execute traditional Turkish baklava recipes with precision, ensuring consistency in flavor, texture, and presentation across all products Develop and customize baklava recipes and flavor profiles, incorporating seasonal ingredients and creating signature variations that reflect both tradition and innovation Manage phyllo dough preparation and handling, maintaining proper techniques to achieve optimal texture and quality in finished products Source and evaluate high-quality ingredients, including nuts, honey, spices, and specialty items, while adapting to local Southeast Asian suppliers and market availability Train and mentor kitchen staff on baklava preparation techniques, food safety protocols, and quality standards Organize and maintain the pastry station, ensuring efficient workflow, proper equipment maintenance, and adherence to food safety regulations Collaborate with front-of-house staff and management to understand customer preferences and gather feedback for continuous improvement Monitor inventory levels and manage food costs while minimizing waste through efficient production planning Maintain detailed records of recipes, production processes, and ingredient specifications to ensure consistency and traceability Uphold all health, safety, and sanitation standards in compliance with local regulations and organizational policies Qualifications Minimum 5 years of professional experience in baklava preparation and Turkish pastry production Advanced expertise in traditional Turkish baklava recipes and techniques, including phyllo dough handling and layering Demonstrated knowledge of Turkish culinary traditions, ingredient selection, and flavor combinations Proficiency in pastry kitchen equipment operation and maintenance Strong understanding of food safety, hygiene standards, and kitchen sanitation protocols Excellent organizational and time management skills with the ability to manage multiple production orders simultaneously Proven ability to work collaboratively with kitchen teams and communicate effectively with diverse staff members Experience in recipe development and menu customization Familiarity with inventory management and food cost control Ability to adapt to local ingredient availability and sourcing in international markets Detail-oriented approach to quality control and consistency in product execution Passion for culinary excellence and commitment to preserving authentic Turkish pastry traditions Preferred: Experience training and mentoring culinary staff Preferred: Knowledge of Middle Eastern and Mediterranean cuisines Preferred: Experience working in international or multicultural kitchen environments Additional Information The opportunity to join an international and innovative and fast-growing group, committed not only to building new hotels, but to creating a global brand.
