SKILLS/REQUIREMENTS

  • The ideal candidate for this position has a degree in restaurant/hotel management and/or has worked in a food and beverage position in an upscale Hotel/Restaurant for a minimum of 2 years.
  • Minimum 2 years’ experience selling fine wine.
  • Experience as a server or bartender required.
  • Adequate level of skill with use of common computer systems including all Office products.
  • Must be Level I certified Sommelier through The Court of Master Sommeliers.

Responsibilities
  • Development of the Wine list including: researching wines, tastings within company parameters, providing recommendations to leadership, ensuring a balancing list is maintained.
  • Communicates daily with the Restaurant Manager and/or Dining Supervisor to review reservations taken and learn of any upcoming reservation regarding wine.
  • Works the Restaurant floor, providing professional wine sales assistance, along with providing professional wine service including re-pours, ensuring proper glassware is used and providing labels upon request. During idle times, will be required to assist the staff in one or all the following duties: back waiter, hosting, reservationist, bus, bar service, polishing etc.
  • Designs and develops extensive wine program, keeping the Restaurant on top of the standards.
  • Attends and occasionally holds daily briefings with the Restaurant FOH staff before start of operation.
  • Develops and teaches Wine Academy for all Food & Beverage staff on a regular basis to ensure high quality service including basic knowledge, techniques on corking and servicing will be demonstrated.
  • Maintains accurate inventory and ensures wine menus reflect current product.
  • Occasionally is responsible for putting away purchased wine deliveries.
  • Prints, writes and makes changes to all wine lists as needed.
  • Process sales through POS and properly process payments.
  • Manages the monthly wine inventory process in addition to ensuring all necessary equipment is in stock and in proper working order. Wine cellars are to be maintained for cleanliness, temperature, lighting, etc.
