Position Summary
The Sous Chef supports and collaborates with the Executive Chef in all aspects of kitchen operations and assumes full leadership in their absence. This role requires expertise across multiple culinary disciplines—including butchery, grilling, sautéing, braising, baking, pastry, banquets and sauce preparation.
The Sous Chef ensures consistency, quality, and efficiency while mentoring the culinary team, upholding safety and sanitation standards, and fostering a culture of excellence.
Essential Responsibilities
· Lead by example: uphold professionalism, punctuality, grooming, and uniform standards.
· Assist with daily operations of a la carte and banquet production.
· Supervise and train culinary staff on proper techniques, standards, and protocols.
· Review schedules, training, menu changes, and banquet requirements with the Executive Chef.
· Manage receiving, storage, rotation, and inventory of food items (FIFO).
· Prepare and plate dishes to specification and oversee quality on the line.
· Ensure mise en place, restocking, and side work are completed in a timely manner.
· Enforce sanitation, food safety, and kitchen safety procedures.
· Conduct closing protocols: check stations, dismiss staff, and ensure all equipment is off.
· Support Executive Chef in recruiting, training, performance reviews, and team development.
· Assist with food requisitions, quality checks, and planning.
· Step in across stations when needed to support the team and maintain service excellence.
· Maintain cleanliness and organization throughout the kitchen.
· Handle occasional tasks outside the primary role (dishes, garbage, janitorial support).
Qualifications
· Proven experience in high-volume, high-quality kitchen operations.
· Strong leadership and communication skills with a team-first mindset.
· Mastery of fundamental culinary techniques; sushi preparation a plus.
· Knowledge of proper food handling, sanitation, and safety procedures (local QFO certificate required).
· Proficiency with inventory, ordering, and basic Microsoft Excel.
· Ability to remain calm, organized, and effective under pressure.
· Strong attention to detail and commitment to continuous improvement.
