Behind the scenes, you’ll ensure quality, maintain high standards and keep the kitchen running smoothly alongside our Head Chef.     A little taste of your day-to-day: Every day is different, but you’ll mostly be: * Manages kitchen operations and ensures compliance with all Food & Beverage policies, standards and procedures. * Adhere to governmental regulations as well as brand standards and hotel or company policies and procedures  * Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily. * Ability to work closely with the Head Chef with all kitchen operations and preparation. * Maintains purchasing, receiving and food storage standards. * Ensures compliance with food handling and sanitation standards. * Maintain close communication with department leaders to ensure proper menu productions, standards, quality and staffing. * Work with Head Chef and Human Resources to ensure the departmental performance of staff is productive- assisting with the recruitment process * Fostering and leading a positive work environment for all employees. * Other ad-hoc duties – unexpected moments when we have to pull together to get a task done. * Sound understanding of HIGA and assist the Head Chef with rostering.   What we need from you: * Certificate in culinary (commercial cookery) preferred  * have 3-5 years’ experience as a Sous chef or similar in a high-volume outlet * Completed Food Handling Certificate * Must have the ability to manage a kitchen.  * Understanding of Food Safety standards and HACCP. * Computer knowledge and skill level for basic office functions * Ability to work varied hours/days, including nights, weekends and holidays as needed. * Completed Food Safety Supervisor Certificate – not necessary but advantageous    Why join us?
